Gourmet Standard Tri-Ply too big
By triniVerified Purchaser from Milwaukee, WI on 10/21/2007
Pros:
Bakes Evenly, High Heat Tolerance
Cons:
Can't use steel wool, Difficult to Clean, Discolored
Best Uses:
saute
Describe Yourself:

Bottom Line:
No, I would not recommend this to a friend

This pan is a bit too big for my largest burner. It hangs over by nearly an inch. I should have purchased the 10 inch version, but was enticed by the additional handle on this pan.

Almost too pretty to use
By Pam gardener and cookVerified Purchaser from Nellysford, VA on 10/4/2007
Pros:
Heavy duty, High Heat Tolerance, Professional
Cons:
May be difficult to lift
Best Uses:
Casseroles, Oven Roasts, Sauteing
Describe Yourself:
Avid Cook
Bottom Line:
Yes, I would recommend this to a friend

With a record hot summer, I've used this pan on my gas cooktop so I don't have to use the oven. It's cooked eggs, seafood, chicken, pasta and veggies beautifully. Its large 12 inch size, heavy cooking surface and high sides allow me to carmelize over a high temperature, locking in flavor, then covering to cook quickly or braise.
Initially I was intimidated by this pan's weight, but it has a handle on the side to assist moving the pan from one to another burner with confidence.
Although it is dish-washer safe, I prefer to wash mine by hand, so I don't risk scratching that super, shiny finish. It only takes a paper towel, a little dish detergent and water to make it sparkle again.
I would compare the quality and finish of this pan to other professional style cookware. My next purchase will be a frypan for smaller meals.

Works best with a polish

Cooks great, but as with my others, seems to do best maintaining a polish on the cooking surface.

Big pan, small burner
By Pat from Derry from Derry, Nh on 4/6/2007

Pan looks good. Lid fits nicely. Well designed for lifting. Less even cooking than I would like. Cooks well immediately over the electric burner, but noticeably cooler on edges where it doesn't contact. Perhaps, it would heat more evenly over a gas burner.

Saute Pan
By J Jones from Willow, MO on 4/6/2007

The first time I used the pan I was impatient to get started and did not let it heat up properly, and of course the food stuck to the pan. After that letting it heat and then putting in the food it worked wonderfully. Its also easy to clean and holds large amounts. I would buy it again. The helper handle is a bonus.

Very useful
By Paule from S.E. Wisconsin on 2/20/2007

I saw the review in "Cooks Illustrated", and am not disapointed at all. A great addition to my eclectic pans. I ask myself how I got along w/o. Be sure to get the pan hot before you add the food or you might have a sticking problem.

Excellent Value
By Patrick from Gainesville, VA on 1/11/2007

Great pan for the money. Just as good build quality as my All-Clad pots. Definitely a well built pan. Heats up quickly and evenly. I'm very happy with this purchase.
