Heat is not distributed evenly throughout the Pan, but the problem might be my electric coil burner, which is pretty small for the size of this pan.
You need to make sure that you have a large enough burner to fully enjoy this pan. We are in the process of remodeling the kitchen, which will bring a new Wolf gas range. This new range has a lot bigger burner surfaces and I think it will work better.
It would also be better if the lid were made of see-through glass so that I would monitor the cooking, but if you are experienced cook it's not a big problem.
The reason I purchased this pan was for its size and the lid. I was interested in large surface so that I could place 6 stakes without the meat being on top of each other. The lid was necessary for simmering at very low heat.
It's a good product and I am using it a lot.

About the largest pan a home cook can handle, but perfect for crowd size cooking. Very high quality construction. Looks good enough for serving.
